Paleo Chicken Nuggets

Though I know how important it is to eat  as healthfully as possible, I'm a kid at heart and chicken nuggets still woo me over from time to time. But with all the news stories about fast food nuggets being inundated with pink slime, I decided that - kid or not - I'd better steer clear. Beside the unknown crap that's pumped into 'em, nuggets aren't paleo friendly anyhow...

Until now! I found a super tasty chicken nugget recipe over on Livin Paleo and was super stoked to whip up the fun favorite. It was great having control of what went into the mix (no slime or potential chicken heads here) and indulging in a previously avoided food. :)

Paleo Chicken Nuggets
recipe from Livin Paleo

Chicken nuggets

1 pound of ground chicken
1 large egg
2 tablespoons hot sauce [I used Frank's]
1/4 cup coconut flour
1 teaspoon salt
1 teaspoon onion powder
1/2 teaspoon garlic powder

1/4 cup coconut flour [I might try using almond flour next time, just because]
2 tablespoons ground flaxseeds
1/4 teaspoon salt

1/3 cup hot sauce [Frank's again]
3 tablespoons ghee

1. Preheat the oven to 375*. Line a large baking sheet with parchment paper.
2. In a small bowl, whisk together the coconut flour through garlic powder. Then in a large bowl, add the flour mixture to the ground chicken, egg, and hot sauce; mix well.
4. Roll mixture into balls (maybe about a golf ball size) and press down onto baking sheet.
5. Combine all the coating ingredients then thoroughly dip each nugget into it. Place back onto baking sheet.
6. Bake for 15 minutes.
7. While baking, melt sauce ingredients together in small sauce pan. Remove nuggets from oven, toss with the sauce, return to baking sheet and bake for another 5 to 10 minutes.
8. Enjoy!

Note: The recipe on Livin Paleo included a paleo ranch dip to eat with these. I didn't make that so can't comment on it but let me know if you do try it!

  1. Thank you SO MUCH for posting this and perfect timing- I literally bought 2 kg of chicken which I was planning on processing and making into a meatloaf...screw that, I'm making these!

    1. Just made them. Amazing. Thank you for the recipe!

    2. Oh awesome, I'm that you enjoyed them!! Thanks for letting me know! :)

  2. So, I'm a super creep and noticed you're from Southern Massachusetts and I get super excited when I hear bloggers say that since I'm from Northeastern Rhode Island (and I work in Mass). Whereabouts are you from??

    Also...those Chicken Nuggets look amazing.

    1. Haha not creepy at all - I'm always curious myself. I'm in Southern MA, fairly close to the RI border so hi neighbor! ;)

Thank you! If you ever give them a go, let me know how they turn out!

  3. I just made these for dinner and they were outstanding! Thanks for sharing :)

  4. Yum! Those sound delicious. Especially with the Franks! That would totally make them for me. Anything I can dip into that.. or sriracha. Big fan of Cholula, too. Hot sauce!!
