Monday provided much of Massachusetts with an enormous, beautiful rainbow...
I absolutely love rainbows - they are so cool! Honestly, who can be mad when looking at a rainbow? While the pictures don't do it justice, let me assure you that this double rainbow was crazy vibrant and lasted a really long time. It made my day! :)
Alrighty, onto the noms aka the best part. Here's some of my eats from the past week:
Nothing fancy here - egg whites and tomato slices, all topped with salt and black pepper. I was sadly out of avocado. :'( I wish I had an avocado tree.
I realize the skin on this chicken looks rather gross in this pic, but it tasted dece. I marinated the drumsticks in balsamic, evoo, coconut aminos, sriracha, and salt & pepper then baked it all up. Some sweet potato slices on the side and dinner was ready.
Leftover sweet potato and hard boiled eggs for an on-the-go breakfast. I hate being in such a rush in the mornings that I have to eat in my car some mornings but I make do. Gotta eat the most important meal of the day. ;)

The skin on this darn Gala apple was SO thick that I had to peel it or I'd still probably be chewing it. And its a well-known fact that apple slices because they taste way better than a whole apple.
(Although is anyone else with me in that Red Delicious apples are awful?!)
Another well known fact: crushed grapes taste better than whole grapes. And wine slush tastes better than regular wine! :)
