I am a sucker for a good caprese salad. For such a simple dish it sure has a lot of flavor. But for best results, you have to use quality ingredients. And that's why your best bet is to make it during the summer: garden-fresh tomaters!
Thanks to Pinterest, my usual caprese salad has taken a spin. Instead of plating up sloppy slices, I chunked everything up and skewered it all on a toothpick. Easier than slicing, neater to eat, and it makes as much or as little as you need. (Hence why the recipe below has no amounts.)
I promise, there's no way to mess these up. Use whatever tomatoes you want, change up the marinade, throw the cheese into some marinade, add prosciutto, whatever. Just promise me you'll use quality ingredients...and enjoy!
Caprese Salad Bites

Tomatoes (cut into rough chunks or use halved grape tomatoes)
Fresh mozzarella cheese, cut into cubes
Fresh basil (small leaves or cut larger leaves in half)
Extra virgin olive oil
Salt and black pepper
1. Marinate your tomatoes in the balsamic, evoo, salt and pepper.
2. Skewer a piece of tomato, cheese, and basil on a toothpick.
3. Eat and repeat.
