WIAW #34

Guess what? Tomorrow is my birthday! :D

And I've got a present for you!

A two-in-one What I Ate Wednesday post! All paleo, of course. Isn't that great? Hehehe ;P


Sunday:


Sunday got off to a great start with a hearty breakfast: egg whites, leftover steak, avocado, and apple. The steak was from an Oktoberfest party we'd gone to the night before and it was mouthwatering. Unfortunately we have no idea what was on it!


My babe made us a quick and tasty lunch. Grilled chicken & pepper topped with salsa, more avocado, and my homemade cinnamon applesauce. Such a good combo!


A handful of pepitas kept me from gnawing off my arm while waiting for dinner.


It was pretty chilly that night but luckily we had prepped a hot slow-cooker supper. Honey-Apple Pork Tenderloin (and a side salad) kept us warm! The apple and cinnamon really made the house smell fantastically fallish.

Monday:


Look, a new breakfast! Egg whites, golden raspberries, and a two-ingredient pancake. I'd wanted to try this pancake from Carrots N Cake for awhile now and finally bit the bullet. No idea why I waited so long because it was awesome and couldn't be any simpler to whip up: mix together a small banana and a large egg and then cook low and slow in a greased pan. I thought that I'd want some almond butter or pure maple syrup on it but honestly, I didn't think the pancake needed anything.


Lunch was supremely amazing...fantastic...EXCELLENT! I made PaleOMG's Chicken Bacon Alfredo and even if you don't eat paleo, you should really check this dish out. Excellent flavors and a great way to use up all the squash that's popping up in the market. Oh, and it has bacon in it - enough said.


After having such great success with both the pancake and the alfredo something was bound to suck. Oh, and suck this Cream of Broccoli soup did. Boring and tasteless no matter what I did to it, yucky color, and super watery. No thanks. #paleofail

  1. Ahhhhh happy early birthday!!! That's so exciting - I will be back for this cake choosing :) I am definitely planning on making that bread this weekend with my leftover zucchinis! And honey apple pork tenderloin? Perfect meal, right there.

  2. Happy Birthday! My fave cake is strawberry shortcake, but I think you'll be unable to do it with the diet. I vote for the chocolate goodness shown above as an alternative!

    1. Thank you! I've only ever made 2 actual real cheesecakes and never a raw one - sounds neat! I'm going to have to research those.

  7. Golden raspberries look so interesting. I've seen them but never tried them before-- do they take like normal raspberries?

    1. They pretty much taste the same - perhaps a little milder, though. Surprisingly, they were cheaper than conventional raspberries at the market the other day!

    ps: I am totally drooling over that pork tenderloin. Sounds like the perfect dish for autumn :)
